Sotoleros, Bienvenido, Ensamble, Sotol Lot 2 (Mexico) 750ML
Producer Notes: A new brand from the infamous co-founder of Clande Sotol, Sotoleros spotlights small regional distillers at viñatas across Chihuahua. Sourcing microbatch distillates of both sotol (Dasylirion) and lechuguilla (Agave) as well as the occasional blend of both – an otherwise lost tradition rarely seen within the commercial category – Sotoleros helps producers to maintain traditional production techniques on an intensely small scale, with releases rarely exceeding 70 bottles.
Perhaps the most iconic maestro in the Sotoleros group, with over 40 years of experience Bienvenido Fernández is something of a mentor figure in Chihuahuan distilling. Apprenticing under both his father and grandfather, Bienvenido grew up steeped in the culture of clandestine sotol vinatas during a time when the spirit was outlawed.
One of the few sotoleros who continues to produce ensambles (blends) of both species, Bienvenido employs both sotol (Dasylirion wheeleri) and agave (Agave shrevei) which grow in close proximity. The plants are wild harvested together, then roasted in a conical earthen oven using river rocks and oak wood. The cooked plants are milled with a small mechanical grinder, then fermented in stainless steel tanks. Distillation is completed in traditional wood-fired copper pot stills with unique wooden caps on top.
