Producer Notes: The Apex series from Milk & Honey was created to push the distillery’s boundaries of creativity and experimentation. Head distiller, Tomer Goren, carefully selects exceptional casks for each limited batch.
-Single Malt Whisky aged in varying cask types on the coast of the Dead Sea, the lowest land-based elevation on Earth.

-Distilled on 6/24/2018

-French vanilla and mocha with notes of cigar box on the nose; the palate opens with black tea leaves followed by a powerful wave of warm baking spice, dark cocoa powder, and crushed white peppercorn. The finish is long, exhibiting candied ginger and clove joined by a bouquet of toasted herbs and coarse sea salt.

-Non-chill filtered; 56.2% ABV

-As part of the Apex Dead Sea project, an array of casks from a variety of types and sizes were placed on the roof of a hotel on the coast of the Dead Sea and exposed to the harsh and dynamic weather for one year of its entire aging period, resulting in almost 25% angels’ share during that time.
