Pais Salvaje (by J. Bouchon) Valle De Maule 2018 (Chile)

91+PTS W.A.

Wine Advocate: 91+ Points: "The just-bottled 2018 País Salvaje was fermented with full clusters but without carbonic maceration, a change compared with the 2017, where part of the wine underwent carbonic maceration. It fermented in concrete and was bottled in August 2018, some four months after the harvest. 2018 seems like a great vintage in Maule (and in a great part of Chile), depending on yields and irrigation, of course. This is juicy, fresh and with more depth and complexity. It has more weight, more precision and very good freshness. This is really impressive. 8,500 bottles produced. It was bottled unfiltered, and it's noticeable."

What is Pais? Pais is a red wine grape that has played a prominent role in the Chilean wine industry. Up until the turn of the 21st century, it was Chile's most planted variety until it was overtaken by Cabernet Sauvignon. Today it is most commonly used in the production of jug wine in the Bío-Bío, Maule and Itata River regions in the south. The grape is sometimes known as Negra Peruana. In Argentina the grape is known as Criolla Chica. Wikipedia
