Levo, Nada Mas, White Wine 2021 (Paso Robles, CA)
Producer Notes: My wife and I are always rummaging around the cellar looking for whites we can pair with Thai, harissa, tacos or intensely spicy foods. Mainly because we are freaks and everything we cook is laced with tons of heat. This wine was made to fill that void. I love crispy white wines and I'm mildly obsessed with the more obscure white varietals from the Rhone. We just planted an estate vineyard in Paso's Willow Creek District in 2020 to Grenache Blanc, Picpoul, Petit Manseng and Roussanne (there are some red varietals planted as well). This is my best rendition as we patiently wait on the Estate vines to mature the goods.
